Our dairy products are produced at our artisanal cheese factory exclusively with organic milk from our flock of sheep and herd of goats.
Quinta do Carapinhal also bottles a delicate extra virgin olive oil extracted from olives from our traditional olive grove.
All our products have organic certification and are produced according to traditional recipes from the region. You can find Quinta do Carapinhal products on sale at Vumba, organic supermarkets and selected gourmet stores.
Located at our estate, overlooking the gentle slopes of green pastures favored by the local microclimate, lies our artisanal cheese factory.
Under the caring guidance of the mistress cheesemaker, our sheep and goat cheeses and yogurts are produced in small batches with the best quality raw materials sourced almost in full from our farm.
As a result of the unique characteristics of our herd, pastures and production technique, Quinta do Carapinhal dairy products are premium, 100% handmade cheeses and yogurts with a genuine taste.
Our gourmet sheep cheese follows a very ancient Portuguese recipe, using organic milk from our flock of about 200 sheep of the Bordaleira Serra da Estrela breed. Production is limited to two thousand units per year, making this cheese a truly rare treat.
Handmade and organic with a genuine flavor, our sheep cheese is available with traditional maturation or with long maturation for a stronger taste. A delicious byproduct of the cheese making process is our much appreciated cottage cheese.
Our fresh goat cheese is produced with organic milk from our herd of goats from the Serpentina and Serrana breeds.
Quinta do Carapinhal also produces natural organic yogurts from sheep and goat milk.
Artisanal production with organic milk from our flock of sheep of the Bordaleira Serra da Estrela breed, thistle flower and sea salt. Our traditional maturation period is around 45 days.
For strong flavor cheese lovers we have the “Quinta do Carapinhal – Long maturation”. As a result of the long maturation period the cheese gains a drier texture and a more intense flavor.

Among the crops and food products from our farm, we bottle and sell under our brand Quinta do Carapinhal an excellent organic extra virgin olive oil extracted from olives from the Galega variety.
The Galega olive variety is the most common in Central Portugal and the Alentejo regions. With an unique organoleptic sensation, this variety makes excellent olive oil suitable for dipping bread and preparing delicacies, where the main objective is to enhance the flavor of the food to the fullest.
The olive oil from the Galega variety has a thick texture, fruity aroma, sweet and delicate flavor. When sourced from green olives, the oil is slightly bitter and spicy with a flavor of green fruits and almondy notes.
Olives are harvested with traditional methods and cold pressed using solely mechanic processes. Our Galega monovarietal extra virgin olive oil is simply divine.
